Lamb Burger Patties

LAMB BURGER SANDWICHES

Serves four

  • 4 EMH lamb burger patties
  • 1 Georgian bread
  • 1 beef tomato
  • 1 cooked beetroot
  • 150 g feta cheese
  • kefir or yoghurt
  • rocket and salad leaves

Crumble the feta cheese. Add kefir or thinner yoghurt and work with a fork until you get a sauce with a thick sour cream consistency. Slice the tomato and beetroot. Cut the bread into quarters and slice each quarter lengthways in half.

Heat a pan and toast the bread slices. Then cook the burger patties on a hot pan or grill for 3 minutes per side or to your desired doneness. Spread all bread quarters with the feta sauce. On the bottom halves, layer salad leaves, tomato slices and a burger patty. Add more feta sauce, beetroot slices and rocket leaves. Top with the upper bread quarters and serve!


LAMB PATTIES WITH SALSA

Serves four

  • 4 EMH lamb burger patties
  • 2 persimmons
  • 1 small red onion
  • 1 large pear
  • 1 jalapeno
  • 1 small pomegranate
  • salt
  • freshly ground black pepper
  • cold-pressed olive oil
  • coriander

Peel the onion and finely chop together with the jalapeno. Deseed the pomegranate. Dice the pear and persimmons. Place everything in a large bowl, add a couple of tablespoons of oil, season with salt and pepper. Tear in coriander leaves, mix well and set aside. Grill or pan-fry the patties and serve immediately with the refreshing salsa.
