T-Bone (Dry-Aged)

GRILLED T-BONE WITH LEMON BUTTER

Serves four

  • 1 EMH beef T-bone steak
  • a little cold-pressed olive oil
  • 2 garlic cloves
  • a few sprigs of thyme
  • a knob of butter
  • salt
  • freshly ground black pepper

lemon butter:

  • 100 g butter
  • 1 tsp thyme leaves
  • lemon juice
  • lemon zest

To make the flavoured butter, bring the butter to room temperature. Once softened, measure the required amount into a small bowl, add lemon zest and juice, thyme leaves, and season with salt and pepper. Mix well, wrap in cling film, roll into a log shape and place in the fridge to firm up.

Heat oil in a pan and sear the steak for 4–5 minutes on each side. Then add the thyme sprigs, crushed garlic cloves and a knob of butter to the pan. Baste the steak with the melted butter, then remove from the pan. Cut a few discs of the flavoured butter, place on the steak and cover with foil. Let rest for 10–15 minutes, slice thinly and serve.
