Wings in Mango-Chilli Marinade

CHICKEN AND CABBAGES

Serves four

  • 12 EMH mango-chilli marinated chicken wings

salad:

  • 300 g Brussels sprouts
  • 200 g red cabbage
  • a bunch of spring onions
  • 150 g plain yoghurt
  • juice of 1 lime
  • 4 tsp Dijon mustard
  • salt

Bake the chicken wings in a preheated 200°C oven for 25–30 minutes. Meanwhile, prepare the salad. Chop the spring onions and mix with the yoghurt and mustard, season with salt. Remove the outer leaves from the sprouts. Then slice very thinly. Squeeze the lime juice over the top and toss with the yoghurt dressing. Serve with the baked chicken wings.


CHICKEN WINGS WITH ASIAN CABBAGE SALAD

Serves two

  • 6 EMH marinated chicken wings
  • 200 g red cabbage
  • 1 jalapeno
  • 3–4 stalks of spring onion
  • 1 tsp sesame seeds
  • 2 tbsp soy sauce
  • 1 tbsp chilli sauce
  • 1 tsp honey
  • juice of 1 lime

Shred the cabbage finely with a knife or grater and place in a bowl. Chop the spring onion and slice the jalapeno, add to the cabbage. In a small bowl, mix the soy sauce, chilli sauce, honey and lime juice until the honey has dissolved. Drizzle the dressing over the salad, toss everything well and serve with grilled chicken wings.
