CHICKEN SHASHLIK WITH TOMATO SALAD
Serves four
- 700-800 g EMH free-range chicken shashlik (leg meat)
salad:
- 4 medium ripe tomatoes
- 1 large or 2 medium garlic cloves
- oregano leaves
- cold-pressed olive oil
- salt
- freshly ground black pepper
Slice the tomatoes, remove the seeds, then dice and place in a bowl. Grate the garlic, chop the oregano and add to the bowl. Season with salt, pepper and olive oil. Refrigerate for about an hour to let the flavours develop. Grill the shashlik and serve with the salad and flatbread or your favourite quality bread.
