CLOUDBERRY PORK WITH ASPARAGUS SALAD
Serves three
- 1 pack (about 600 g) shashlik in cloudberry marinade
salad:
- 100 g rocket
- 1 bunch (about 500 g) green asparagus
- extra virgin olive oil
- salt
- juice of 1/2 lemon
- Parmesan cheese
Break or cut off the woody ends of the asparagus. Shave into thin ribbons using a mandoline or vegetable peeler. Toss with the rocket in a bowl, drizzle with olive oil and lemon juice, and season with salt. Mix well, top generously with Parmesan shavings and serve alongside the shashlik.
