GRILLED FRANKFURTERS WITH PEPPER SALAD

Serves four

  • 1 pack EMH pork frankfurters
  • 3 large onions
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 3 white bell peppers
  • a couple of sprigs of oregano
  • cold-pressed olive oil
  • apple cider vinegar

Peel the onions, cut into wedges and grill until golden. Place the peppers on the grill as well and char on all sides until blackened. Transfer to a bowl, cover with cling film and let stand for 10-15 minutes. Then remove the skins and seeds from the peppers and tear into strips. Add the onions, oregano leaves, drizzle with olive oil and vinegar. Season with salt, mix well and serve alongside the grilled frankfurters.
