HONEY-MUSTARD PORK WITH SPICY SALAD
Serves three
- 1 pack (about 600 g) shashlik in honey-mustard marinade
salad:
- 200 g cucumber
- 200 g tomatoes
- 100–150 g spinach
- 2 tbsp lime juice
- 6 tbsp extra virgin olive oil
- 1 tsp Dijon mustard
- 1 jalapeno
- salt
- freshly ground black pepper
Cut the cucumber and tomatoes as you like, place in a bowl and add the spinach leaves. For the dressing, finely chop the jalapeno and place in a small jar with a lid. Add the lime juice, mustard and olive oil, season with salt and pepper. Close the lid and shake vigorously until well combined. Drizzle over the salad, toss and serve alongside the shashlik.
